It’s National Strawberry Month, and who doesn’t just love a juicy, ripe, summer strawberry—not to mention a WHOLE MONTH to try a different strawberry recipe each day? While you really can’t go wrong by eating one all on its own, let’s make this summer one for taking it up a notch. Strawberries are a versatile fruit, lending their sweet notes to delicious summer cocktails, savory salads and salsas, and not forget dessert. Strawberries also happen to be full of good-for-you nutrients including more Vitamin C than an orange. So grab your reusable bags, buy some strawberries, and then try out one (or all!) of these great summer, strawberry recipes.
Summer Blended Strawberry Limeade
It tastes like a strawberry margarita without the empty calories, and by blending it, you’ll have yourself an icy cold drink to bear the heat with. Want to take it up a notch? Add in 1 cup of your favorite plain yogurt for an extra kick of protein and creaminess or sub out the filtered water for sparkling water for an extra fizzy burst.
What You’ll Need
- 3-4 ice cubes
- 1 cup to 2 cups cold, filtered water or chilled sparkling water
- 2 to 4 limes, depending on the size
- 3 to 4 fresh strawberries
- 1 tablespoon agave nectar
- 1 cup plain yogurt (optional)
Place all ingredients in high-powered blender. Blend until well mixed, then pour into tall, chilled glass.
Strawberry Summer Salad
Strawberries and spinach are the perfect pair, but we think strawberries and kale go well too(hello, green smoothies!) What happens when you combine all three? The result is an explosion of good health and flavor, and lean protein from the optional chicken breast or boiled egg.
What You’ll Need
- 1 tbsp balsamic vinaigrette
- 2 tablespoons chopped fresh strawberries
- 1 cup chopped cooked chicken breast (optional)
- 1 boiled egg, chopped (optional)
- 1 cup kale, chopped
- 1 cup baby spinach
- 2 tbsp slivered almonds
- 2 tbsp sunflower seeds
- 2 tbsp pepitas
- 1 tbsp crumbled Feta or goat cheese
Mix all ingredients into a bowl and enjoy!
